If you’re anything like me on Monday mornings or any day that requires me to leave home by a certain time (specifically the ungodly hour of 6 am!), you’re always in a rush. One of the things that always guarantees a late departure is preparing breakfast on the go. In an attempt to avoid spending an astronomical price on breakfast/coffee, I searched my virtual BFF, Pinterest and found these healthy savory spinach mushroom (I also
added tomatoes) egg “cupcakes”.
